As you know, Matcha powder is quite versatile and used in various desserts, such as baked confectionaries, whipped cream, puddings, and, of course, Wagashi. Among these, one of the most popular ones must be Matcha ice cream.

In Japan, Matcha ice cream is so popular that you can find it at ice cream shops, supermarkets, and convenience stores. As with other foods, the texture and taste of Matcha ice cream vary depending on the product, so it would be interesting to compare different Matcha ice cream products when you visit Japan. Overall, the bitterness of Matcha adds a twist to the sweetness of the ice cream, and the elegant flavor of Matcha spreads in your mouth.

We are going to introduce our Matcha ice cream recipe using an ice cream maker. It is totally convenient, and you should have one at home if you are an ice cream lover. All you have to do is mix the ingredients beforehand, pour them into the ice cream maker, and wait for the Matcha ice cream to be ready.

While there are plenty of choices for Matcha ice cream available, one advantage of making it at home is that you can adjust the amount of ingredients to your liking. If you prefer a stronger Matcha flavor, you can add more Matcha powder. For a lighter texture, you can use less heavy cream and more milk.

It is important to note that the Matcha powder in our recipe (J Taste Multipurpose Matcha Powder) already contains sugar, so if you are using pure Matcha powder, you’ll need to adjust the amounts of Matcha powder and sugar to suit your taste.

Ingredients
  • 1 Tbsp J Taste Multipurpose Matcha Powder
  • 1 Tbsp Hot Water (under 80℃)
  • 100 ml Heavy Cream
  • 1 Egg Yolk (pasteurized)
  • 2 Tbsp Sugar
  • 50 ml Milk

Instructions

1) Gathering the Ingredients

Gather the ingredients together.

Note: We are using J Taste Multipurpose Matcha Powder which is already slightly sweetened. If using normal matcha powder, please adjust the sweetness to your liking.

2) Mixing the Matcha Powder and Hot Water

Dissolve the matcha powder in bit of hot water.

3) Adding the Rest of the Ice Cream Ingredients

Add the sugar, egg yolk, milk, and heavy cream in that order, mixing well after each addition. Once combined, if the mixture is warm, chill it in the fridge until cooled.

Note: please use a pasteurized egg yolk as we will not be heating this mixture.

4) Pouring the Matcha Custard Into the Ice Cream Maker Bowl

Pour the mixture to the ice cream maker bowl and place a lid. Turn on the machine and keep the machine running until the ice cream mixture becomes firmer (about 15-20 minutes).

Note: Please chill your ice cream maker bowl in the freezer (according to your manufacturer's instructions) before placing the custard mixture into it.

5) Serving the Matcha Ice Cream

Open the lid and scoop the Matcha ice cream. Serve as you prefer. Enjoy!
