Hakusen Shuzo

Hakusen Shuzo is an artisanal brewer of hon mirin, sake and shochu, founded around 1850. This family-run brewery is located in the small town of Kawabe in the foothills of Japan’s southern Alps in Gifu prefecture.

They use high-quality, locally grown ingredients to make all of their products. In addition, Hakusen makes each of the key components in-house, and also ages its hon-mirin for longer periods than most other artisanal brewers. For instance, Fukuraijun hon-mirin is aged for three years and Koko hon-mirin for ten years.
