Hatcho miso is a signature product of Maruya and it has the strong flavor of soybeans with a touch of sourness and astringency. Its relatively hard texture and faint moisture is a sign that its umami is tightly packed in the miso paste. It is said that there are only two manufacturers that can produce hatcho miso in Japan.
Not only the miso paste but also tamari soy sauce, the secret ingredient of this product, are organic. This product is also free of additives.
