To tell the truth, Soba Noodle Salad is not a major dish in Japan. As you know, soba is a Japanese noodle made from buckwheat flour and is commonly eaten with a dashi and soy sauce-based soup or dipping sauce. However, this is a perfect way to utilize soba in a different way and can be a delicious way to use up leftover soba.

  • 80 g Dried Soba Noodles
  • 50 g Cucumber
  • 35 g Cherry Tomatoes
  • 25 g Radish
  • 20 g Mixed Salad Greens
  • 1 Tbsp Olive Oil (for the salad dressing)
  • 1 Tbsp Soy Sauce (for the salad dressing)
  • 1 Tbsp Rice Vinegar (for the salad dressing)

Dried soba noodles are as preservable as pasta, making them a great addition to your pantry. When selecting soba noodles, it is essential to consider the ratio of buckwheat to wheat flour.

Nihachi soba, like this one, has a ratio of 80% buckwheat to 20% wheat flour, resulting in a smoother texture compared to jyuwari soba, which has a 100% buckwheat flour ratio.

Instructions

1) Gathering the Ingredients

Gather the ingredients together.

2) Preparing the Salad Dressing

Prepare a bowl and add olive oil, soy sauce, rice vinegar, sugar, and wasabi paste. Mix them together well and set aside.

3) Boiling the Soba Noodles

Prepare a large pot and fill it with enough water to cover the soba noodles. Heat over medium heat. Once the water is boiling, add the dried soba noodles and use cooking chopsticks to separate them. Boil for the time indicated on the package, adjusting the heat as needed to prevent boiling over.

4) Cutting up the Vegetables

While boiling the noodles, cut the vegetables as you prefer.

Note: we are using 130g of mixed vegetables for our recipe. Feel free to change up the ingredients and use other veggies like carrots, avocado, lettuce, etc.

5) Cooling the Soba Noodles

Once the soba noodles are cooked, drain them using a sieve and cool the noodles with cold tap water, then a bowl of ice water.

Drain the water well before assembling the salad.

6) Assembling the Soba Noodle Salad

Prepare a plate or dish and place the soba noodles on it. Then, top with the vegetables and toppings in order.

7) Adding Dressing and Enjoying

Before eating, drizzle the salad dressing and enjoy!
